Light Rye Sourdough BreadOur light rye sourdough bread is based on the French Country Blend sourdough bread recipe. We replace the whole wheat and buckwheat flours with stone ground organic light rye flour. This produces a bread flour to rye flour ratio of 2:1. We also add premium quality dark brown caraway seeds to the dough during the last few minutes of kneading. Caraway seeds are used as a spice in Central and Northern European rye breads. The caraway infuses the bread with a pungent, anise-like flavor and aroma. Yummy!
